Honey Taco Sweet Potato Bowls

In a baking pan, add chopped sweet potato and mix with olive oil and seasonings (garlic powder, paprika, salt, pepper). Bake about 30 minutes or until sweet potatoes are done. In a separate pan, sauté chopped onion and minced garlic, then add ground beef or turkey and cook until browned, draining any excess fat. Add the packet of taco seasoning and a bit of water, cover, and simmer according to seasoning packet instructions or until heated through. To assemble bowls, start with a base of cottage cheese or Greek yogurt and feta. Top with avocado, shredded lettuce, chopped tomatoes, the cooked meat mixture, and roasted sweet potatoes. Drizzle with honey or hot honey and add additional salt and pepper if desired. It is so good!
