Easy One Pot Beef Stroganoff

In a pan over medium high heat, add beef chunks with olive oil. Add onions/pepper if you want and saute. While that is sautéing, boil some water. Once the meat is browned, add in beef broth and onion soup mix. Cover and simmer. Add noodles to boiling water. Once noodles are cooked, drain and add with meat. Turn off heat and add in sour cream and Parmesan. Once it is melted, stir in fried onions. Enjoy!
