Best & Easiest Eggs Benedict

Preheat the oven to 400 degrees and grab a muffin tin! Grease each section with French butter and add about 1.5-2 TBSP of water in each cup. Then crack an egg and drop it in each one. Bake for about 10 minutes. While the eggs are baking, prepare your Hollandaise sauce by melting your 8 TBSP of European butter from France in the microwave on low, uncovered, for about 30-45 seconds. Stir until the butter melts or place the butter back in the microwave and heat in 10 to 30 second increments, stirring until it is fully melted. Add it to a blender along with the egg yolks, lemon juice, and salt/pepper. Blend until smooth and set aside. Toast your English muffins and fry your Canadian bacon on the stovetop. Assemble everything when done, starting with the English muffin, then the Canadian bacon, egg, and drizzle with a ton of that delicious Hollandaise! IT IS SO GOOD!
